What Is the Difference Between Oil-Soluble and Water-Soluble Lecithin Liquid?

The difference between oil-soluble and water-soluble lecithin only worked for different types of fat liquor:1. The HLB value for oil-soluble is 4 to 5. oil-soluble soya lecithin liquid, it can only be used in oily form.2. The HLB value for water-soluble lecithin is 9-10. Modified/water-soluble lecithin liquid, it can both used for oily and water forms.So, water-soluble is more multifunctional compared with oil-soluble, The emulsification effect will be better.

What Is The Advantage Of Modified/Water Soluble Soya Lecithin?

This product is liquid lecithin modified from concentrated lecithin through acetylation and hydroxylation. Compared with concentrated lecithin, this product is improved in hydrophilicity and lipophilicity, with light color and good fluidity.Applications:For foods: It serves as the emulsifier of leather greasing agent and can enhance the degree of cross-linking of bond, with stronger bipolarity than concentrated lecithin.For industrial: It can be widely applied in water-based printing ink, paper, wood board,film production, etc.

What is the SOYA LECITHIN applicated in chocolate?
